Mike who heads up the private chef and kitchen team started his career studying Culinary Arts in Limerick and had his first placement as a chef in the luxurious Park Hotel Kenmare and went on to work in some of the best restaurants and hotels in Ireland and Internationally. From Relais and Châteaux, Michelin Bib Gourmands and 2 AA rosettes Mike knows food that even the most discerning guests will love.

Collette leads the polished front of house service team as well as helping to plan your event or dinner party with you from the beginning. She was born into a guesthouse and grew up surrounded in hospitality. From table and menu design she will liaise closely with the you and ensures every need is met.
